Indian Waffles - Old Family Recipe

This recipe is from my grandmother Mimi's recipe book. To the best of my knowledge it dates back to the 1920s!

  • I cup flour
  • 2 cups sour milk (I used buttermilk - see note below)
  • 1 cup cornmeal
  • 1 tsp soda
  • 1 tsp salt (I added this because she mentioned salt in the directions but didn't include it in the ingredients)
  • 2 tablespoons sugar
  • 2 eggs
  • 1 tablespoon water

Mix everything together and stir. I added 2 tsp oil to the mix so it would not stick to the waffle maker.  In addition, you can use this as Pancake batter, just thin it out with more buttermilk.

Note:  In the 20s when milk would spoil or turn sour, it was used in baking. I have attached the original recipe in Mimi's handwriting which was written with a fountain pen.
